3-302.14 Protection from Unapproved Additives.

(A) FOOD shall be protected from contamination that may result from the

addition of, as specified in Section 3-202.12:

(1) Unsafe or unAPPROVED FOOD or COLOR ADDITIVES; P

and

(2) Unsafe or unAPPROVED levels of APPROVED FOOD and

COLOR ADDITIVES. P

(B) A FOOD EMPLOYEE may not:

(1) Apply sulfiting agents to fresh fruits and vegetables intended for

raw consumption or to a FOOD considered to be a good source of

vitamin B1;

or

(2) Except for grapes, serve or sell FOOD specified under

Subparagraph (B)(1) of this section that is treated with sulfiting agents

before receipt by the RETAIL FOOD ESTABLISHMENT.

3-302.15 Washing Fruits and Vegetables.

(A) Except as specified in Paragraph (B) of this section and except for whole,

raw fruits and vegetables that are intended for washing by the CONSUMER

before consumption, raw fruits and vegetables shall be thoroughly washed

in water to remove soil and other contaminants before being cut, combined

with other ingredients, cooked, served, or offered for human consumption in

READY-TO- EAT form.

(B) Fruits and vegetables may be washed by using chemicals as specified

under Section 7-204.12.

(C)Devices used for on-site generation of chemicals meeting the
