The second violation involved hand hygiene and handwashing facilities. Inspectors documented: Wiping cloths not stored clean and dry, or in a sanitizing solution, between uses.. According to FDA guidelines, proper handwashing with soap and warm water for at least 20 seconds is the single most effective way to prevent foodborne illness transmission.
