CHICAGO, IL - Health department officials identified compliance issues at YINKRES NIGERIAN RESTAURANT in an inspection dated 04/11/2023.

Observed Previously Returned Coolers Showing Evidence That the Interior of Cooler Is Being Used Directly As a Food Contact Surface. Coolers Are Not Designed or Constructed to Be Used As a Direct Food Contact Surface. Provide Barrier Between Food and Interior of Cooler. Priority Violation 7-38-005. Citation Issued. The FDA Food Code requires cold foods to be held at 41°F or below and hot foods at 135°F or above to prevent bacterial growth in the "danger zone." The third violation related to handwashing procedures. Inspectors documented: Warewashing Facilities: Installed, Maintained & Used. According to FDA guidelines, proper handwashing with soap and warm water for at least 20 seconds is the single most effective way to prevent foodborne illness transmission. Must Remove From Premises or Install Larger 3 Compartment Sink to Sully Submerge All Pots..
